MIXED VEGETABLES IN CREAM SAUCE
This is a popular dish in the Indian homes in the USA. Its essentially mixed vegetables in a cream curry. The vegetables come from the widely available and familiar mixed vegetables frozen pack. This also qualifies it in the fast meal category. The mixture of pre-cut green beans and carrots, corn and pinto? beans in a rich creamy curry gives it a pan-american taste.

India connection: In this form, it is just not common in India because of un-availability of this kind of frozen cut vegetables. However, there are other dishes that come close, like Vegetable Jalfarezi which is popular in restaurants in India.

The USP: It is a very palatable Indian dish for the American taste buds because of familar vegetables and cream sauce. At the same time it uses the core masala paste giving it the true Indian flavor.

Serves 2 Working time two minutes Preparation time: 30 minutes
What you will need:
1 packet Frozen Mixed Vegetables
1 quart Heavy Whipping Cream
1 large Onion
3 medium Tomatoes
1/2 tea-spoon Ginger-Garlic Paste
5 Green Cardamoms
1/2 teaspoon to taste Garam Masala
2 teaspoon Salt
4 tablespoon Olive oil
Preparation Steps:
Cut the onion in big chunks and blend it to a paste in the blender
Cut tomatoes in big chunks and blend it to a paste in the blender
Take out the seeds from the cardamoms and coarsely beat the seeds in a mortar and pestle
Heat oil in a saucepan and add the blended onion to it, fry till it turns a dark brown. To this add the tomatoes and fry till the mixture leaves a little oil. Add the ginger-garlic paste and green cardomoms.
Add the frozen vegetables, garam masala, black pepper powder and salt. Mix well and add 2 cups water. Once the water starts boiling cover it and simmer for 10minutes. Add the heavy whipping cream and cook for 2 mintues.
